Not Sufferin Succotash

~ fresh from the field Bicolored Sweet Corn
~ fresh from the field Taylor Pole Lima Beans
~ butter or butter substitute
~ salt
~ pepper

Place shelled beans in sauté pan with a little water and about a spoonful of butter. Steam until water dissolves then add the freshly boiled corn which has been cut off the cob. Add salt and pepper and sauté for a few more minutes.
To prepare the corn, boil water in a large pot; add corn then boil for 1 minute; turn off burner and let sit for about 8 minutes before removing from pot.

Feel free to adjust the amounts to your liking. Who are we to tell you how much to make and how to season!

It’s our first dinner with the corn and it did not disappoint. On its own and prepared in this dish, it was so sweet and delicious. Yes, we continue to be corn snobs on Taylor Farm -either it’s just come in from the field or it’s too old.

We’ll have more corn to offer at our farm stand and for pick your own as time goes by.
